What we’ve discovered is that infrared heat makes the pizza crust crisp but does not dry it out. Our 304 stainless steel, infrared rack raises the cooking surface of the pizza above the grates to slow down the cooking process so that the crust and top of the pizza cook evenly. The large open area of our perforated cooking surface allows the maximum amount of infrared heat to reach the crust, making the outside of the crust crisp while keeping the inside and toppings moist.
You can use your favorite dough and toppings, from fresh dough to frozen and even flatbread. And the pizzas are ready in a matter of minutes, which is great when you have a large crowd of hungry kids and adults. BUFFALO CHICKEN PIZZA WITH BLUE CHEESE SAUCE

Makes 1 pizza

TEC Grills Pizza Recipes - Buffalo Chicken Pizza

1 frozen pizza crust
2-3 chicken tenders or cutlets, grilled, shredded and tossed with Buffalo sauce
1/2 cup mozzarella cheese, grated
1/4 cup chopped celery
1/4 cup shredded carrots
2 green onions, grilled and chopped
1 tablespoon blue cheese crumbles
1 tablespoon blue cheese dressing
  1. Remove crust from freezer, and let thaw at room temperature for 15-20 minutes. It is best if the crust is completely defrosted.
  2. Have all ingredients ready and prepped before you start topping the crust. Be sure that sauce and cheese are room temperature (not hot or cold!).
  3. When you are ready to make pizza, place the Infrared Pizza Rack on the grates of your TEC Grill, and preheat the grill on medium for 10-15 minutes.
  4. Sprinkle a pizza peel (or if you don’t have a peel, use the back side of a sheet pan) with a little bit of corn meal. This will help the pizza crust to slide off easier. Place the thawed crust on the peel on top of the corn meal. Wiggle the peel to be sure the crust slides easily on the peel.
  5. Working quickly, top the crust with the Buffalo sauce, chicken, mozzarella, celery, carrots, and green onions.
  6. Slide the pizza directly on top of the Infrared Pizza Rack. Turn the heat down to low and close the hood. Check the pizza after about 5 minutes. The pizza should be ready in about 8-10 minutes, when the crust is golden brown and crispy, and the cheese is melted and bubbly.
  7. Remove from the grill, and top with the blue cheese and blue cheese dressing. Serve immediately.

STEAK AND MUSHROOM PAN PIZZA WITH WORCESTERSHIRE CREAM SAUCE

Makes 1 10-inch pan pizza

TEC Grills Pizza Recipes - Steak and Mushroom Pizza

Olive oil
1 ball ready-made pizza dough, room temperature
1 tablespoon parsley, chopped
1 clove garlic, minced
1/4 cup mozzarella cheese, grated
1/4 cup Parmesan cheese, grated
1/2 cup steak, grilled and sliced
1 portabella mushroom, grilled and sliced
3-4 slices red onion, grilled
1 tablespoon heavy cream
1 teaspoon Worcestershire sauce
1 tablespoon chives, chopped
  1. When you are ready to make pizza, place the Infrared Pizza Rack on the grates of your TEC Grill, and preheat the grill on medium for 10-15 minutes.
  2. Drizzle a generous amount of olive oil in the bottom of a 10-inch sauté or cast iron pan (or two 8-inch pans).
  3. Press the dough into the bottom of the pan, and up the sides. Brush with more olive oil and sprinkle with the parsley and garlic.
  4. Top with the cheeses, steak, mushroom, and red onion.
  5. Place the pan directly on top of the Infrared Pizza Rack. Turn the heat down to low and close the hood. Check the pizza after about 5 minutes. The pizza should be ready in about 8-10 minutes, when the crust is golden brown and crispy, and the cheese is melted and bubbly.
  6. Meanwhile, stir together the cream, Worcestershire, and chives in a small bowl.
  7. When the pizza is ready, remove from the grill, and top with the Worcestershire cream sauce. Serve immediately.

GYRO FLATBREAD PIZZA WITH TZATZIKI SAUCE

Makes 1 pizza

TEC Grills Pizza Recipes - Gyro Flatbread Pizza

1 slice flatbread
2 tablespoons tomato or pizza sauce
1/4 cup mozzarella cheese, grated
3-4 slices of gyro meat, grilled and sliced
5-6 slices of hothouse cucumber
3 grape tomatoes, grilled and sliced
3-4 slices red onion, grilled
1 tablespoon feta cheese, crumbled
1 tablespoon tzatziki sauce
  1. Place the flatbread on a pizza peel (or if you don’t have a peel, use the back side of a sheet pan).
  2. Have all ingredients ready and prepped before you start topping the crust. Be sure that sauce and cheese are room temperature (not hot or cold!).
  3. When you are ready to make pizza, place the Infrared Pizza Rack on the grates of your TEC Grill, and preheat the grill on medium for 10-15 minutes.
  4. Working quickly, spread the tomato sauce all over the flatbread. Then top with the mozzarella, gyro meat, cucumber, tomatoes, and red onion.
  5. Slide the pizza directly on top of the Infrared Pizza Rack. Turn the heat down to low and close the hood. Check the pizza after about 5 minutes. The pizza should be ready in about 6-8 minutes, when the crust is golden brown and crispy, and the cheese is melted and bubbly.
  6. Remove from the grill, and top with the feta cheese and tzatziki sauce. Serve immediately.
