May is fittingly National Barbeque Month, as we celebrate the return of the warm days of summer!

It should come as no surprise that Memorial Day Monday is also National Barbeque Day and National Hamburger Day.  So what better way to celebrate than with a family cook out featuring classic burgers and potato salad?  But give them a TEC Grills twist with some new flavor combinations!

Blue Cheese and Bacon Burgers with Sriracha Mayo

Ingredients
  • 1 pound 85% lean ground beef
  • 1 cup blue cheese crumbles, plus more for garnish
  • About 6 slices bacon, cooked and crumbled
  • 1/2 cup mayonnaise
  • 2 tablespoons Sriracha sauce, or to taste
  • 1 teaspoon ketchup
  • 1 red onion, cut into large rings
  • 4 rolls or buns, preferably onion rolls
  • Olive oil
  • Lettuce
  • Tomato
Instructions
  1. Gently mix together the ground beef with the blue cheese and bacon. Form into patties of desired size. Season patties all over with salt and pepper, and then gently press your thumb into the center of the patty to form a small indentation.
  2. Mix together mayonnaise, sriracha sauce, and ketchup in a small bowl and set aside.
  3. Preheat grill on high heat. When the grill is hot, turn down to medium heat and add the burgers and onions to the grill. Cook until burgers are at desired internal temperature, and onions are charred.   4. If desired, when burgers are flipped over, top with a little more blue cheese. Close the hood to melt the cheese and finish cooking burgers. Remove burgers from the grill and set aside to rest.
  5. Brush rolls with a little olive oil. Toast rolls or buns on the grill until lightly browned. Assemble burgers by placing a patty on the bun, and garnishing with lettuce, tomato, grilled onion, and sriracha mayo.
Grilled Potato Salad with Cider Mustard Dressing

Ingredients
  • 1 pound baby potatoes
  • 1/4 cup cider vinegar
  • 1/4 cup chicken or vegetable stock
  • 1/4 cup whole grain mustard
  • Olive oil
  • 1 sweet onion, such as Vidalia, sliced
  • 1/4 cup fresh dill, chopped
Instructions
  1. Place potatoes in a large pot of salted water, and bring to a boil. Reduce heat and cook until potatoes are tender, about 10 minutes. Remove from heat and drain.
  2. Meanwhile, mix together vinegar, stock and mustard in a small bowl and set aside.
  3. Preheat grill on medium heat. When the grill is hot, add the potatoes to the grill, and cook until charred all over. Remove from heat and place in a large bowl.
  4. Heat a sauté pan over medium heat. When the pan is hot, add enough olive oil to coat the bottom of the pan. When the oil is hot, add the onion and cook until onion is caramelized.
  5. Add the vinegar mixture to the pan, and stir to combine. Reduce sauce until just slightly thickened, about 5 minutes. Add potatoes to the pan, and continue cooking until potatoes are well coated with the thickened sauce.
  6. Add the dill to the bowl and stir to coat the potatoes with the sauce. Season with salt and pepper.

Grilled Corn with Parmesan and Smoked Paprika Butter

Ingredients
  • 1/4 cup unsalted butter, softened
  • 1/4 cup Parmesan cheese, grated
  • 1 tablespoon greek yogurt or sour cream
  • 1 tablespoon smoked paprika
  • 1 tablespoon fresh parsley, chopped
  • 4 ears corn
Instructions
  1. Mix together the butter, cheese, yogurt, paprika, and parsley in a small bowl. Season with salt and pepper.
  2. Preheat grill over medium heat. When the grill is hot, add the corn to the grill and cook until charred in spots and warmed through.
  3. Remove corn from the heat and immediately slather with the smoked paprika butter.

 

Skillet Chocolate Chip Cookies a la Mode

Ingredients
  • Your favorite chocolate chip cookie recipe, such as [url href=”http://https://www.verybestbaking.com/recipes/18476/original-nestle-toll-house-chocolate-chip-cookies/” target=”_blank” title=”Nestle Toll House Cookies”]Nestle Toll House cookies[/url]
  • Vanilla ice cream
Instructions
  1. Preheat grill over medium heat.
  2. Meanwhile, form cookie dough into a long roll. Refrigerate until ready to bake.
  3. When grill is ready, slice off rounds of the dough and fit into in a small cast iron skillet in a single layer.
  4. Place the skillet on a grill rack (not directly over the flame), and grill bake until cookie is set and brown. It might not be cooked all the way through, but that is the gooey good part!
  5. Remove cookie from the grill, and immediately top with a scoop of vanilla ice cream. Serve warm.
