 Smoked Barbecue Pork Spare Ribs

 

Season the meat. Rub Lawry’s seasoning salt and black pepper into the meat side of the ribs

Prepare the grill. Put a 1”-1.5” row of wood chips across the front of the grates just behind the control knobs. Turn the grill on high and close the hood for 5-6 minutes until the chips are smoking. Reduce heat to low and let the grates cool for about 5 minutes with the hood open before putting on the ribs.

Grill! After the grates have cooled slightly, put the ribs on the back of the grill grates, bone-side down, and close the hood. After 20 minutes, check the ribs. If they look like they are almost done, go and flip the rack of ribs. Otherwise, wait an additional 10 minutes before turning the ribs. Cook 10 more minutes, meat-side down. Total cooking time is about 45-45 minutes.

Note: Barbecue sauce can be applied 5 minutes before removing the meat from the grill or after it is done. Dilute your favorite sauce with apple cider vinegar, using half of a cup of vinegar for every cup of barbecue sauce. Brush the sauce-vinegar mixture on the meat side of the ribs.
